Burritos baby!

Training: 3.5km run / 300m swim

Wait a sec…..back it up a minute….

Tonight after work I competed in a short aquathon. While these races normally follow a swim then run format (ie. no bike), tonight’s race was backwards.

So, we had to complete a 3.5km run first…

then dive into the lake for a 300m swim.

It was a fairly laid back race, and a lot of fun. It was certainly a strange sensation diving into the water feeling somewhat breathless after the run.

I survived but was STARVING by the time we finished. I had been thinking about dinner since lunch, and knew exactly what I wanted….BURRITOS!

I started by pan frying some onions, garlic and spices. Then added a big amount of mushrooms, corn, tomato, capsicum, a tin of kidney beans and some tomato paste and peri peri sauce.

While the vegies were simmering away, I cooked some brown rice, which was then added to the pan.

After the mix had simmered for a little longer, I stirred through a good handful of fresh baby spinach and coriander.

Then it was simply a matter of topping wraps with the rice/bean mixture, some cheese and a good dollop of natural yoghurt.

Then wrap and enjoy!

Let’s just say I enjoyed every mouthful of these healthy burritos. Mr BBB even agreed that they are the perfect throw-together meal! I actually don't think he realised that they didn't have any meat in them....

  2. There is something about a good burrito that is just so satisfying! Are most of these races you do pretty close to where you live?

  3. the burrito looks so yummy!!!! also...i'm totally jealous that you could find a race after work! on a weekday!!! you must live somewhere mighty warm to be swimming sans wetsuit during this time of year!

  5. Hi Lisa! Just visiting your blog for the first time...thank you for your comments on mine. Wow, what an athlete you are! Swimming always makes me starving so I can imaging you were famished for those burritos. When I first saw the top pic, I thought it was a restaurant burrito. Nice!

  7. Hehe we had burritos last night made into quesadillas (although not quite as healthy as yours!). I love how quick they are to make and how delicious they are too :D

    I just going back through your blog looking for more recipes to try and just made this for dinner. I used a tin of Mexi beans instead of kidney beans and seasonings and boy was it delicious. We all loved this - except for Christy who only ate the brown rice :-).
