Training: Run 5k
As I was running this afternoon, I had a realisation that it is February already. Where did January go? Thankfully a quick browse through my computer when I got home reminded me of all the fun things we did in January (and alleviated any fears/panic that I had that I had wasted a month already....)
January started with a snowy trip to Japan...
Followed by a painful race...
BBQs...
Birthdays...
And burritos....
More races....
Bike rides...
Coffee....
An Australia Day bbq....
And finished with a birthday!
In fitness news, I apparently ran 67.5km, biked 46km and swam 7.5km. Whoa!!! Sounds like a lot when you add it all together!
So it seems I did fit a lot in this month! Here's hoping February is equally as exciting.
Training
Tonight I headed out for a run – this time a speedy 5km.
I made sure I strapped my knees. I have previously suffered from an overuse injury and don’t want the same to happen again.
Dinner
I returned home HUNGRY and decided on another vegetarian dish for dinner - Lentil Korma Curry.
I am not a vegetarian, but sometimes I just don't eat a lot of meat. I guess this is one of those times (much to Mr BBB's dismay).
I didn't follow a recipe, as such. After heating the korma paste, I added a mixture of broccoli, carrots, zucchini and mushrooms to the pan.
Followed by some light coconut milk, and a can of brown lentils.
Then it was just a matter of letting the mixture simmer away for 30 minutes or so until some of the liquid had evaporated and the vegies were nice and soft.
At the very end I stirred through some fresh coriander, and served the curry with a serving of brown rice (again to Mr BBB's dismay!).
I am loving these bowls that we picked up in Japan!
Now I am off to watch some trash tv do some really important things…

ReplyDeleteI love a good curry. I've never seen canned lentils before. I'm pretty sure I've even gone looking for them. I guess the Aussies are one step ahead.

I often get alot of overuse injuries...specifically to my knees and ankles. Id love to find some good preventative methods for this. Amazing looking curry to hon!! Take care!
