Pasta Friday

I am so happy that it is Friday. We have a lot of fun things planned for this weekend so I guess that I just wanted the week to be over so that we could start the festivities!

Tonight we decided on an easy end of week oven baked pasta / spinach dish.

Starting with some buckwheat pasta noodles, cooked until al dente.

And while the noodles were cooking, I sautéed some mushrooms, zucchini, spinach and corn. Basically using up the vegies we had left in the fridge.

Then stir everything together….

And layer in an oven proof dish…topped with a generous serving of cheese….

Oh my heart this was a delicious dish!

If you are not a fan of cheese I am sure that you could make it without.

However, I AM definitely a lover of cheese so did not go without… IMG_3473Simple yet healthy. I loved how packed full of vegies this was :)

Well it is almost 10.00pm so Mr BBB and I are about to walk to the local club to watch.....the Super 14 Rugby Union opening game!!!!!

Let’s just say it is way past my bedtime already –but I did have a few baking tasks that kept me occupied this evening….all to be revealed tomorrow…

  2. OH yum.... I've never seen that Bertoli sauce before but it looks fabulous!
