I just had the yummiest dinner – but before I get ahead of myself…
Training: Swim Squad (1.6km)
This morning started bright and early with a 6.30am swim squad session. While I am doing my own swim training to get my distance / swim fitness up, I enjoy attending a squad once a week to focus on technique.
This morning's session lasted an hour and went something like this:
Warm Up
200 metres free style
200 metres IM (ie. 25 polo swim, 25 back, 25 breaststroke and 25 free x2)
Drill Set
200m - kickboard
100m side kick / free style
100m - 6 kick switch / free style
100m - scratchies / freestyle
100 m - recovery (50 breast / 50 free)
Speed
300m - time trial (ie. go as fast as you can!)
100m - recovery - easy pace
Cool down
200m - freestyle
Total: 1.6km
I love the variety in these sessions, and I find the drill sets to be particularly helpful in improving technique.
Whilst I may be able to swim more than 1.6km in an hour session, it is good to slow down and work on efficiency too.
Before I knew it the session was over, and I had to make a mad dash into work. The only problem with the before work swims is that once I have showered I hit peak hour traffic and it takes me AGES to drive into work. Oh well, I suppose crazy traffic one morning a week is not that bad.
Speaking of work, I had one of those busy yet productive days - where the phone doesn't stop ringing and the 'in tray' seems to grow bigger rather than smaller. It makes the day go quickly though I must admit.
Dinner
Tonight Mr BBB is out, and I knew I had a sweet potato just waiting to be eaten, so after some online recipe searching I decided on stuffed sweet potatoes.
In the end I didn’t follow a recipe as such, but just threw what I had in the fridge in the mix.
Starting with the sweet potato – baked for about 40 minutes.
While the sweet potato was baking, I sautéed some mushrooms, zucchini and spinach (and was horrified at how the frozen spinach looked like out of the packet!).
Once the potatoes were done, it was simply a matter of scooping out the soft insides, and adding it to the spinach mix – coupled with a big dollop of cottage cheese.
Then stuff – top with a little rice crumb – and bake into the oven for 20 minutes or so.
Served with a side of steamed asparagus.
Overall this was an easy yet delicious meal for one. The sweetness of the potato, coupled with the vegies, was a perfect combination. Well in my humble opinion anyway ;)

Sweet potatoes make the absolute best dinner. I find that I am constantly craving them. I love the spinach/cottage cheese stuffing idea!
I can't imagine exercising before work...I think I would just be too tired :D
