Friday frolics

Training: 7km

There is something very exciting when the clock hits 5.00pm on a Friday - and when you know that a long weekend awaits.

I dashed home, packed my bags, prepared our bikes and loaded up the car. Our destination? Why the ever popular South Coast of course.

This weekend Mr BBB and I were super busy. We fit in a bike ride, a 70th birthday celebration, coast time and of course, some baking.

Let’s get to the baking first shall we?

I honestly don't think I am capable of attending any event without 'bringing a plate'. Hey - I love baking, and what better way of sharing that love than with a big group of party-goers.

This weekend we were invited to a 70th birthday, so I decided to make a simple lemon slice to take along.

Seriously, this no bake slice is beyond simple.

Starting with some biscuits, finely crushed.

With coconut and lemon rind mixed in.

In a small saucepan I melted the sweetened condensed milk with butter until smooth and glossy.  A lot of butter apparently.

The wet ingredients are then combined with the biscuit mix and lemon juice, and firmly pressed  into a lined slice dish. I added a sprinkle of coconut to the top of the biscuit layer also.

I put the slice in the fridge while I made a simple icing with icing sugar and lemon juice, warmed on the stove until smooth.

  Spread over the slice with an extra sprinkle of coconut.

Then back into into the fridge until the slice was firm.

All cut up and ready for the party!

  1. Yeah... I'm going to have to wait to make this until I am bringing it somewhere and leaving it there. It looks yummy enough (and I love lemon enough) that I probably wouldn't be able to keep away :-P
