Well it seems that I am not the only one who likes spicy foods! I must admit that I never liked spicy food growing up, but it is something that I learned to love. Mr BBB is a big fan of spicy food, and really encouraged me to give it a try. Now, many years later, the love of spicy food has grown on me and you will regularly find me adding chilli, spicy mustards and wasabi to my dishes (well not all at once...). I think my tolerance for spicy food has increased the more that I eat it.
Training: 5km run
I headed out on my usual 5km loop this evening, taking it slow to test out my leg. It felt a lot better than yesterday, but I think some old knee problems are coming back to haunt me. We'll just have to wait and see.
Dinner
Tonight I turned to the Mystery Box for a little inspiration. And the chosen ingredient was.....PARSNIP!
Did you know that parsnips are a root vegetable that are related to carrots. They are also rich in vitamin C, niacin, potassium and dietary fibre.
I am a huge fan of parsnip, particularly roasted parsnip, but wanted to give a new dish a try. After a little research, I decided on a curried parsnip soup.
I asked Mr BBB to pick up some parsnips from the market on his way home from work and I had to giggle when he walked in the door. Check out this HUGE bag!!!
Looks like we will be having a lot of parsnip soup eh?
I dry fried some cumin and turmeric until aromatic, then added the parsnips and a few peeled and chopped apples.
Simmered with vegetable stock until the veggies were soft.
Then blended until smooth.
Served with a sprinkle of toasted cumin seeds.
Served with a GF toasted sammie – made up of cheese, sardines and mustard. A new combo that was…well….. just ok…..this was Mr BBB’s creation.
Try as I might I cannot seem to love sardines…
I must say that Mr BBB was quite apprehensive about tonight’s dinner. He is a self professed hater of parsnip, and the idea of a parsnip soup was not that appealing to him. And the verdict… alas…he was not a fan.
I, on the other hand, really liked this soup. It was quite sweet, which worked well with the toasted cumin seeds.
I won’t share the recipe, just yet. I think it needs some tweaking.

ReplyDeleteI love parsnips. I think of them as a carrot alternative. They have a different flavor, but the same texture as carrots. Sometimes you get better parsnips than others. The spring parsnips are supposed to be sweeter than fall ones. I think I even did a post on parsnips... yes, yes I did. ReplyDeleteSadly Mr NQN doesn't like parsnips at all. I think that along with alfalfa are the only vegetables that he doesn't like. I don't mind it though and the soup looks good! :)

ReplyDeleteThose are really good-looking parsnips, not too big and an even size. And you can't go past roasted parsnips, with a bit of brown sugar sprinkled on to encourage caramelisation. Your soup's a good idea, too.
