Carrots and beer

Carrots and beer…strange combination right?

Well, not when the Mystery Box is involved!

(LOVE these freshly picked carrots from my trip the Farmer’s Market!)

Tonight’s chosen ingredient was carrot, and it did not take me long to find  inspiration for dinner.

Indian-style carrot fitters, based on a recipe in the Cook’s Companion, but adapted to be wheat free.

Starting with besan flour and a good range of spices.

Coupled with beer, egg, grated carrot and fresh coriander.

Then pan fried until cooked through.

While the fritters were cooking, I chopped up a head of broccoli and roasted it in the oven with a little olive oil for 20 minutes.

And in a matter of no time, Monday’s carrot and beer medley was served!

I think a good dollop of natural yoghurt would have topped these fritters off perfectly. Ah well, there is always next time.

The beer added a nice flavour to the fritters, despite my initial scepticism. And the roasted broccoli…..I am in love :)

Well time for a little Master Chef watching packing, and then an early night. I have a 4.30am wake up call tomorrow ugh….

  1. There is a salmon recipe I make where there are chopped up carrots (and other veggies) spread on top. That is definitely my favorite. The fritters look great!

  2. these look delicious - love the idea of beer in the fritters - my latest favourite carrot dish is roasting them with dukkah and pomegranate molasses - very very good!

  3. Ooh I've never tried carrot fritters before but they sound great. I don't like raw carrots but I do like cooked ones. I get really excited at Dutch carrots too! :P

  5. I love Indian fritters (pakora) - I mean what's not to like about your favourite vegies in a spicy batter cooked until they are nice and crunchy?

    The beer would give it a slightly malty taste? And no doubt a great texture for the batter.
