Cauliflower cravings

Training: Upper weights/rowing machine

I knew this evening was going to be crazy (with bank meetings, packing, and baking), so a pre-work gym session was on the cards. I haven't done a lot of strength training recently, but with the cooler months fast approaching, I am keen to get back into regular weight training. This morning I opted for an upper body strength workout, with a 1km burst on the rowing machine to finish. I kept the weights fairly light, and the workout fairly short, but I figured that would be wise. You have to have a starting point right?

Dinner

The Mystery Box provided some much need inspiration this evening, and I was excited when I drew out one of my favourite vegetables....cauliflower.

Mr BBB begged kindly requested cauliflower with cheese sauce, and whilst I am not adverse to that dish, I wanted something more nutritionally balanced for dinner.

I decided on a Cauliflower and potato bake, veggie-fied. Because as you know, I like to veggie-fy my meals :)

I boiled the cauliflower then used the pulse function on my food processor to blend the cauliflower roughly.

Mixed with mashed potatoes, light ricotta, dijon mustard, spinach and mushrooms.

Pressed into a baking dish, with a drizzle of olive oil and a little cup of grated parmesan.

Baked for 30 minutes until the top is golden brown.

I was going to serve this dish with a side of veggies, but seeing as it was made of veggies I figured it would work ok on its own.

And the best part? Lots of leftovers for tomorrow night’s dinner!.

Cauliflower and potato bake – serves 4

Ingredients

  • 1 cauliflower, cut into florets
  • 4 potatoes, mashed
  • 2 mushrooms, chopped
  • handful baby spinach
  • 250g light ricotta
  • 1 tbs dijon
  • 1 tbs olive oil
  • 1/4 cup grated parmesan cheese

Method

  1. Boil the cauliflower for 5 minutes, then process (using the pulse setting on your food processor) until roughly chopped.
  2. Combine cauliflower, potato, mushrooms, spinach, ricotta and dijon mustard. Mix well.
  3. 3. Press into lightly oiled baking dish. Drizzle olive oil and sprinkle parmesan cheese over the top.
  4. Cook at 350F for 30 minutes or until golden brown.

  3. Oh man that looks SO good!!! I love cauliflower. My favorite way to eat it is just roasted - it ends up tasting kind of like popcorn!
