Fun running and potato baking

Wow – what a day! I can’t believe that it is Sunday evening already….where did the weekend go?

This morning Mr BBB and I participated in a 5km fun run hosted by the Canadian High Commission, with race proceeds going to the ACT Cancer Council.

I had initially planned to do the 10km event, but when Mr BBB said that he would like to join me, we decided to drop down to the 5km event instead (he is recovering from injury).

It was absolutely gorgeous weather for a morning run – not too hot and not too cold.

I was also pleased to see that the event was well attended, particularly given that it was for such a good cause.

Although I also suspect that the promise of complimentary post-race pancakes may have had a positive impact on participant numbers ;)

We finished the run in around  28:15, then Mr BBB hit up the pancake tent.

I assume that was proper Canadian maple syrup too!

I had  a relaxing yet productive day,  but it wasn’t long before I found myself at home and turning to the Mystery Box for dinner.

Did you know?  Potatoes are rich in carbohydrates and dietary fibre (mainly in the skin), and are a great source of potassium , vitamin B6 and vitamin C.  There are about five thousand different varieties of potatoes grown all over the world!

I had one thing on my mind when I drew this ingredient…..baked potatoes! For what better way to celebrate the humble potato?!

Scrubbed and placed in the oven for 90 minutes at 200* until soft, served alongside roasted broccoli.

I topped mine with leftover lentil / sweet potato curry, corn and peas.

And a dollop of  natural yoghurt sprinkle of chives

Mr BBB went for the more traditional “bacon, cheese and sour cream” combo.

So easy, but oh so delicious! A lovely end to a lovely weekend.

  1. Sounds like a lovely day! I hope that was real Canadian maple syrup on those babies! The fake stuff just doesn't compare :)

  2. Hmmm... my favorite would probably be when you make them twice-baked with cheese & chives. Sometimes though nothing beats the butter/sour cream/chive combo :). Glad you had such beautiful weather for your run!

  6. It looked like a nice autumn day! So funny to see cool weather on your blog with it being 90+ degrees here in Washington, DC! (I think you made the same comment to me when we were buried in snow and it was summer for you!)
    Potato-I love to top mine with fresh salsa and Greek yogurt!
    Also I have a question for you--you eat spelt products but you have a wheat allergy? I wanted to try those spelt pancakes but was reading an article about how spelt is wheat. I'm confused!

  8. Oh hey cool! I literally JUST decided about 10 mins ago to do my first 5k next month and then I see you did one today. I have run 3 miles before, but I have never run in a 5k event, even in a friendly one. I really want to though. I am not routinely running 3 miles now so I need to step it up. The race I want to do is on July 4 :)

  10. Yum Yum! I've been contemplating cooking potatoes this way for awhile, but never got round to doing it. But this looks so yummy I think I"ll have to change that now!

  11. Even as a vegetarian, I can totally see the appeal in Mr BBB's spud ;)

    Just wanted to say I made your Cauliflower & Potato bake the other day - I put in a whole punnet of mushrooms and a packet of spinach to really boost up the vege intake. It was delicious and is on high rotation at the moment :)

  12. I'm a terrible Canberran! I didn't even know this Fun Run was on :( (Not that I could've run it, with my bung foot and all, but I could've cheered you on!)

    I also can't even remember the last time I had a baked potato. Theoretically, though, I'll say my favourite topping is blue cheese :)

  13. I think that last baked potato is totally calling my name. That looks absolutely scrumptious! I think sour cream and chives are a definite yes for baking potatoes :D

    mmm baked potatoes with beans and salsa is really good. ive had it with hummus too which was delicious!
