Another sunny day in Canberra = a wonderful public holiday. With sunny weather and relaxing days like these, I am sad that I have to go back to work tomorrow.
So, we decided to spend a little extra time on breakfast this morning.
What better way to finish off a long weekend than with a little pancake party – “his and hers” style….
I used Angela’s recipe for spelt pancakes as a base, with rice milk and cinnamon to flavour the batter.
I made 5 little pancakes and served them in a stack with with strawberries and banana.
With a drizzle of agave, PB and rice milk – that I had mixed together and warmed until smooth.
Mr BBB made 2 large pancakes and went for the ‘Canadian’ breakfast – bacon, eggs and maple syrup.

As Canberra had provided another sunny day, and we had no real plans, we decided to head out for a bike ride.
This time I suggested we ride to Tharwa (about 20km away).
The roads were a little unsafe by the time we hit 15km (with no real bike lanes that we could use and 100km speed zones) so we decided to turn around and head home.
We did, however, tackle some decent hills and ended up riding around 32km.
We spent the afternoon window shopping for a new bedroom setting and lounge suite. Our new house won’t be finished until November this year – but it can’t hurt to look!
Mystery Box
I turned to the Mystery Box for dinner inspiration this evening and the chosen ingredient was…
Mushrooms!
Did you know? Mushrooms are often classified as a vegetable but they are in fact a fungi . Mushrooms are very low in calories and sodium, but are a rich source of potassium, riboflavin, niacin, and selenium.
I started with two gorgeous portobello mushrooms, and stuffed them with a mix of lentils, tofu and capsicum, which had been sautéed with a teaspoon of curry powder.
Baked for 15 minutes until soft, and served with a heap of sweet potato fries and green beans.

Oh my – these mushrooms were ‘meaty’ and worked well with the curried lentil / tofu mix. Not to mention being super easy and healthy.
The only change that I would make is that next time I would bake the mushrooms for a few minutes longer - they were still a little tough in parts.
I also had some room for some vanilla ice-cream with banana and strawberries.
A nice way to end this long weekend!

ReplyDeleteI love mushrooms so much that my favorite dish is probably just mushrooms and green beans sauteed in some garlic and olive oil - nice and simple. The stuffed portobello does look delicious though!
ReplyDeleteI love to make grilled portabello sandwiches. I brush mushrooms and red peppers with some smashed garlic and olive oil and grill until just right (which varies from person to person.) Inside I saute some red onion and spinach (or any green) in olive oil. Toast the bread a bit on the grill (or off if you don't like smokey bread). I like to spice up a little mayo with hot sauce for a condiment.
ReplyDeleteG makes incredible beef stroganoff with loads and loads of mushrooms. While we're big meat eaters, we've also done it with a variety of mushrooms and no meat. Stroganoff is so rich and decadant yet homey and comforting.
Hmmm, I need to plan dinner....

WOW! Delicious! I don't use mushrooms...at all, now that I think about it. Maybe it's time to add it into my diet a bit. :D
ReplyDeleteYum!! That mushroom recipe looks great. I usually just eat mine steamed or in sauce or a stir-fry or something. Very un-inventive but I do like that the texture is somewhat meat like so I can use them instead of meat (or substitute half)in a chili or pasta sauce.

ReplyDeleteMy favourite way to have mushrooms is in grilled veggie sandwiches with balsamic and goats cheese.
I love the his and hers pancakes - yours look a bit more up my alley...and I love the agave and pb combo...sounds delicious and perfect for pancakes. I adore mushrooms - I like to marinate and grill big portabellos - but I'm also a sucker for mushroom risottos...delicious!

ohnn...as an answer to your question that you put on my blog. I was very fortunate to get some light in my table at Watersedge. PLus i used my 50mm which has a f/1.8 (good for low light) and i did some touch ups with photoshop =)

Fresh mushrooms are best cooked with a touch of white wine, butter and beautiful sea salt. And on toast.
ReplyDeleteMmmm those mushrooms look good - I love mushrooms in stews and things but don't eat them often enough as a starring vegie like that - I think I should - but if I had a choice I would prefer pancakes on my frypan - they are always excellent!
