Pizza Party

IMG_8382

When my alarm went off at 5.00am this morning my body said one thing...."no way". I turned off the alarm and fell back to sleep for another hour and boy was my body thankful. An early morning weights session was just not happening today so I decided to take the day off from exercise.  Listen to your body....check!

Mr BBB and I had no plans this evening, which we were kind of grateful for. We have been out for dinner twice this week (which is very unusual for us), so a lazy evening and an easy home cooked meal was definitely on the cards.

And what better way to spend a Friday evening than with a little pizza party!

A while ago I found a spelt pizza dough recipe that I was eager to try. Normally I make pizza dough out of rice flour, but it is an acquired taste. So, not wanting to expose the other people in our house to the unusual textures of rice flour bases, I decided to give the spelt base a try instead.

Pre-proving…

And post.

Ready to roll…

Once the dough was done, it was on to the fun part...the toppings!

I decided to make 3 varieties of pizza, hoping to keep everyone happy.

Starting with a Bombay Pizza - made with tandoori tofu, mango chutney, mushrooms, spinach, coriander and cashews - garnished with natural yoghurt.

For the spice lovers, I made a Mexican Pizza - with salami, olives, tomato, capsicum and Spanish onions. Sprinkled with chilli flakes for some extra heat!

And finishing with the Tropical Pizza pizza, topped with prosciutto, mushrooms and pineapple .

And yes, they tasted as good as they look ;)

Pizza is one dish that I absolutely love to make at home. So much so, that I will RARELY buy it anymore. I love how creative you can be both with the base, and with the toppings, and satisfy any cravings that you are having at one particular time. Feel like something spicy? Go for a salami pizza! Feeling like veggies? No problem... load it up with zucchini, pumpkin and other fresh veggies. Feel like something simple? Too easy....you can't beat the good ol' reliable basil and tomato combination.

Well time for some Friday night R & R. My weekend is looking like it will be fairly quiet, although I am hoping to:

  • Bake some cookies
  • Make a new 'secret' syrup that I am keen to try
  • Go to 1 or 2 yoga classes
  • Seek some sunshine for a run
  • Plan our weekly meals and go grocery shopping (*confession - this is actually one of my favourite parts of the week...)
  • Dinner with friends (maybe)
  • Yum cha with friends
  • Start organising the 100000s of photos I have stored on my computer and update our photo albums
  • Do my filing and prepare for tax time (*confession - this is most certainly not going to be one of my favourite parts of the week...)

Hmm - now that I have it all listed it seems that my weekend is not going to be that quiet at all!

What about you? What are your plans for the weekend? Anything exciting?

PS - I finally updated my "About Me" page :)

Happy baking :)

  17. Oooooh my gosh, that Bombay pizza looks amazing!! I had such a craving for pizza last night that my bf went out and bought us a $5 pie haha. Sometimes (especially when you're sick!!) nothing beats a big doughy greasy pizza.

Although when I make my own, I like wheat crust, thin crust and recently I've been experimenting with rosemary potatoes on pizza. Oh it's good. You should give it a try :)

  19. Yum - that Bombay pizza look especially good. (Except for the tofu, since I can't eat soy. But I'd use some paneer instead.)

We're going into New York City to meet my boyfriend's old neighbors, who are visiting from Queensland. (Thought you'd appreciate that.)
