Talk about a busy weekend!
Saturday night's Charity Ball was a wonderful event for a fantastic cause. Over 400 people attended the event, with proceeds being donated to Cystic Fibrosis Australia.It was fun to get dressed up, and party the night away, and Jess - you were correct - Shannan Ponton and Sam Rouen (both of The Biggest Loser fame) were attendees! No pictures unfortunately as I forgot my camera?! Bad blogger.
The late night on Saturday, meant for a fairly quiet Sunday. Brunch + movies + grocery shopping + homemade pizza = a perfect recovery day.
The weekend did, however, disappear too quickly and my alarm clock welcomed me to the start of a new week with a rather unwanted jolt this morning. Oh well - I really can't complaint though as there is only one more week of work until Mr BBB and I pack up the car and head to sunny Queensland for a little holiday. Let's just say I am a tad excited ;)
This evening after work Mr BBB and I laced up our sneakers and headed out for a 5km run along our usual path. It was nice to have my running buddy back, and even nicer to sweat out the weekend's indulgences.
We arrived home quite famished, so I was pleased when the Mystery Box supplied a well known and versatile ingredient:
Egg!
And you know your eggs are free range and local when you find a chicken feather in the carton!
Did you know? Eggs are a source of omega-3 fats (the healthy fats), which can have significant benefits for the heart and blood vessels. They also contain 11 different vitamins and minerals (vitamin A, all 8 of the B group vitamins and vitamins D and E), high quality protein and important antioxidants.
Given we had an omelette only the other evening, I wanted to make something different tonight. I had a stack of beans in the cupboard, a fridge filled with produce, and a recollection of seeing a recipe for Huevos Rancheros here a little while ago.
I made the bean mixture using garlic, mushrooms, capsicum, corn, onion, kidney beans, tomatoes, cumin, basil, chilli powder.
I didn’t have any peri peri sauce, so I used a fresh red chilli (seeded and sliced) instead.
When the bean mixture had softened, I made some small wells and cracked an egg directly into each one.
Covered and simmered for 4 minutes, until the eggs were cooked.
Divided between bowls.
And served with a corn tortilla.
I really liked the flavours of this dish – spicy but not overpowering. Kinda like a vegetarian chilli, with the added protein bonus of a soft cooked egg!
Quick, easy and tasty....my kind of weeknight meal.

ReplyDeleteI adore eggs, and I love this idea! One of the best meals I ever had was a black pasta dish that involved the waiter cracking an egg on the top of my pasta and then mixing it with the noodles right at my table. It was on my honeymoon in Frisco. Amazing.

ReplyDeleteThat sounds delicious. I never think to crack an egg into a dish and let it cook. Usually I scramble them into dishes like stirfries, which lead to less egg in each serving. Thanks for the idea - I'll have to try this over the winter when I made veggie chili.
