But first - I am so glad to see that I am not the only one with a love of mustard! I loved reading your suggested ways to use mustard too - it sure is a versatile ingredient.
Training
Yesterday's rain passed and I awoke to a clear albeit chilly morning. Perfect weather for commuting to and from work by bike. The trip takes 40 - 45 minutes each way and is mainly downhill on the ride to work (and therefore mostly uphill on the way home!).
My only issue with the ride is that someone mentioned magpie swooping season has started.... So yes I was on the lookout for any suspects of the bird variety the entire ride. And no - I do not have cable ties sticking out of my helmet (Canberra readers will know exactly what I am talking about!).
Stats for the day: Bike 32km / 1.5 hours.
Mystery Box
This evening's Mystery Box ingredient was another good one:
Celery!
Did you know? Celery is an excellent source of vitamin C and fibre. It is also rich in folic acid, potassium, and vitamins B1 and B6. And, a little tip for you, if you are sick of your celery going soft after a few days, try wrapping it in foil and keep it in the fridge to keep it crunchy. Works for me!
This evening I decided to make a vegetarian celery chilli. And yes, I know, chilli has featured on this blog before.
But let me explain. I had a bunch of celery in the fridge and, not wanting to go to the shops, I decided to see what I could make using the ingredients I had on hand. And what is a better 'throw together' meal than chilli!
Celery, mushrooms, carrots, zucchinis, 4-bean mix, chilli, spices and tomatoes, simmered for a good hour or so.
And finished with a splash of red wine vinegar,
And and couple handfuls of baby spinach.
Served with avocado….
And natural corn chips for dipping.
I actually really love the texture of celery that has been cooked.
Time for some celery crunchin’ :)
What about you? How do you like to use celery? Aside from adding it to chilli, I love celery spread with peanut butter for a quick afternoon snack - strange but tasty!

ReplyDeleteOooh, this looks spectacularly healthy and warming! I don't often have celery on hand, and when I do (usually after buying it for soup) I end up making stir-fries very heavy on celery as it starts to go limp ;) Must remember this recipe in future!
ReplyDeleteI just googled magpie swooping and wow! There are some crazy helmet getups that people have come up with to deter those birds :)
ReplyDeleteI have been swooped at by crows during nesting season but those Magpies seem much more aggressive!

Uh, YUM----MY! I usually use celery in stews or as a snack. :P I'm plain-Jane with most things at this point. I keep getting adventurous, thanks to you!

ReplyDeleteThat's kind of nice that your work commute is hillier on the way home - mine is the reverse and I always have to plan in an extra 10 minutes once at work to cool down and put myself back together!
I use lots of celery in my vegggie soup! My family also love it with peanut butter and raisins - ants on a log! :)

ReplyDeleteMy brother got swooped by a magpie when he was 3 years old. It wasn't pretty and he needed stiches. They scare the hell out of me now.
I think people underestimate how much damage magpies can do, one of my friends was running in Stromlo Forrest and had to get his ear stitched up after a super territorial one attacked him.

I love the old celery stick filled with pnut butter too. You can't beat an old classic!
ReplyDeleteWhen I worked at the cafe, we had a terrible time with magpies stealing food from customers. We had signs everywhere asking people not to feed them, but no one paid attention until swooping season! I know of a child who lost an eye due to a magpie attack. They can be really dangerous, be careful on your ride.

ReplyDeleteI'm one of those strange people that don't like raw carrot or celery but like the cooked version. I've even had celery on pizza at a friend's house and really liked it! I wonder what you would think of it Lisa? :)

ReplyDeletenever thought to pack celery into a chilli - it is always the bridesmaid and never the bride in my cooking - I have found a celery salad that I loved but using up a bunch of celery is often a challenge as I don't use much of it at a time
