7 reasons why I love public holidays…

#1 – No work and no guilt over sleeping in until 10am!!!!

Dill!

Did you know? Dill is a short lived perennial herb that is related to parsley and the carrot. It is believed to have soothing qualities, and is often used to relieve colic in babies.  Dill is sometimes confused with fennel as the leaves are quite similar, although the flavour of dill is more akin to caraway.

When I drew this ingredient I knew exactly what to cook. I had seen a recipe for fish cakes in this wonderful cookbook a little while ago, and was keen to give it a try.

It was actually a pretty simple recipe…Mix flaked salmon, mayonnaise, mustard, dill and parsley.

After rounding into patties, brush with egg, and fry in a little olive oil for 3 minutes each side.

Served with a large green salad.

And topped with natural yoghurt mixed with some extra fresh dill.

A healthy yet tasty take on an old favourite.

#7 – Although I did not get enough votes to advance to challenge 3 of the Project Foodbuzz competition, I had a great time competing in challenges 1 and 2, and I am so ever grateful for those of you that did vote for me :) And hey, I now have a killer dinner party menu just waiting for the right occasion ;)

Ahhh yes, how could you not love public holidays!

  5. I don't use dill to cook very often. But I would gladly use those dark chocolate covered dried cranberries - yum! :)

  7. Those fish cakes look incredible!!! We don't use dill too much but I do like it in cakes like those and in salads involving mayo/miracle whip.

  8. I looove dill. Cucumber, yogurt, dill sauce is one of my favorite easy sauces that goes great on fish, potatoes, and pretty much anything else you can dream up.

    Looks like you had the streets to yourself. It was very quiet around my suburb yesterday. I thought with the rain everyone would be at the shops but they were empty.

  14. That looks like an amazing day! That's exactly how I like to spend my days off. As for dill I've never really used it in my cooking, but the husband makes a dip with sour cream that uses a lot of dill and it's pretty tasty, although not very healthy.

  17. Love the look of your lunch and the gelato. I buy the same brand in the dairyfree types. I like how they are in tiny containers so I'm not tempted to eat too much!
    I love dill. I always say that herbs should be used as ingredients, not garnishes!
