Onion breath

So I may have ended up with onion breath, but this dish was worth it!

I didn’t get a long ride in yesterday for various reasons, but I did have a productive day finishing my tax return, shopping for new house furniture and generally just chill-axing with Mr BBB. Today, however, it was back to reality (in more ways than one), and I fit in a 5km run after work.

Tonight's dinner was super easy, and quick to prepare, owing to some meal preparation during the day yesterday.

Did you know? Onions are part of the Allium family which contains over 300 species, including leeks, garlic, and chives. Their pungent smell is caused by the presence of allicins, which are released when part of the plant is cut (also causing your eyes to water!). Onions were worshipped by the Ancient Egyptians, who believed  their spherical shape and concentric rings symbolized eternal life.

How could I not make French Onion Soup with onions as my inspiration.

I turned to my favourite cookbook for guidance, which delivered a soup that was oh so indulgent (but also oh so tasty).

I greased a casserole dish with butter, added sliced brown onions,

Then dabbed the top with a little more butter and a generous amount of cracked pepper.

Next I added a whole bottle of dry white wine.

Yes you read that correct, a whole bottle.

Baked in the oven for 2 hours at 180C, then for a further 1 hour at 220C.

As you can see – the result were beautifully caramelised onions that had soaked up the wine (and made the house smell divine).

With the onions already being cooked, this evening it was simply a matter of making the 'soup'.

Into oven-friendly soup bowls went the onion, a slice of GF bread and a sprinkle of grated cheese. Repeated. With chicken stock poured over to finish.

Into the oven until the soup was bubbling, and the cheese had browned on top.

Perhaps not too waistline friendly, but delicious nonetheless.

And totally worth the onion breath ;)

  2. Hehe I'm one of those people that just loooves onions and always try and keep a jar of caramelised onions in the fridge-but it doesn't always work as I eat them! :P

  7. French onion soup is my favorite soup. I love to caramelize onions and eat them on just about anything. I just ate breakfast, but that picture made me hungry all over again. I predict soup in my future.

  10. I always used to leave onions out of recipes, but I have recently fallen in love! My husband even commented at brunch yesterday when I got onions in my omelette! :)

  11. Wow - that's some soup. Looks delicious. I use onions in lots of recipes but my favourite would be just chucked on the BBQ. I have a yummy caramalised quiche recipe too.

  16. My old roommate made something similar one time. It was SOOO GOOD!! I love adding onions to just about anything. I eat salads nearly every day and I always have red onions on them. Occasionally I will have sweet onions. I'm definitely a huge fan of onions. I had the most amazing portable sandwich the other day that had caramelized onions on it.

    I'd be happy with onion and tomotatos cooked up for dinner. YUM YUM! ;-)
