8 reasons I love weekends…

1. Starting each day with a big cup of coffee!

A tamari rice salad!

Fresh and healthy – and full of flavour.

Tamari Rice Salad

  • 3 cups cooked brown rice
  • 1 can chickpeas, drained and rinsed
  • 1 carrot, peeled and thinly sliced
  • 1 red capsicum, diced
  • 100g snow peas, sliced
  • 1 zucchini, diced
  • 1/2 – 1 cup parsley leaves, chopped
  • 1tbs sesame oil
  • 2 tbs tamari
  • 1tsp minced ginger
  1. Combine rice, chickpeas and vegetables in a large bowl.
  2. In a jar, mix sesame oil, tamari and ginger.
  3. Pour dressing over salad and stir until well combined. Season to taste.

    I love how creamy your oats look - and are those chia seeds sprinkled on top? I always cook them in, wow!

  11. I love weekend breakfast- I always use our wedding plates, even if it's just the same coffee and oats/yoghurt as I eat during the week.

    I thought I'd never want to get on a bike again, but your pics make me want to ride RIGHT NOW :)

  13. Coffee is definitely the thing that gets me out of bed most mornings. The highlight of my weekends is spending time with my husband and dog. We don't see each other much during the week, so the weekends mean a lot to us.

  14. Lots of yummy eats. I am definitely going to make that salad ASAP. Looks so yummy. Love the countryside photos - you're so lucky to have somewhere nice and flat and relatively traffic free to ride. I can't transport my bike so I'm stuck riding in the 'burbs with the traffic - which is why I don't do it very often :-(.
    Hubby and I are headed to Canberra in a couple of weeks. We're going to some homemade markets I want to visit but do you have any other suggestions of things to do. We've been plenty of times but I don't think ever without the girls :-).
