All in good thyme

Training: Ride 32km

A bike ride to / from work today was the perfect way to end a busy work week (and fit in a training session). I LOVE my new aerobars, and although they took some getting used to, I think I have them figured out.

Dinner

I was relieved to see we had nothing on the calendar this evening, so I made the most of my 'free night' by spending time in the kitchen preparing a hearty meal.

The Mystery Box has been somewhat neglected of late, but tonight it provided an ingredient that may very well be my all time favourite herb...

Thyme!

Did you know? Ancient Greeks used thyme in their baths and burnt it as incense in their temples, believing that thyme was a source of courage. In the European Middle Ages, thyme was placed beneath pillows to aid sleep and ward off nightmares. In cooking, thyme is a good source of iron, and pairs particularly well with lamb, tomatoes and eggs.

I love how even a little thyme added to dishes can add such wonderful aromas and flavour. And tonight's side dish was no exception.

Roasted sweet potato with thyme and maple.

Baked for 40 minutes until golden brown.

Served alongside a slice of roast beef.

And a pile of peas and corn.

Roasted sweet potato with thyme and maple

  • 2 large sweet potatoes, peeled and cut into thick slices
  • 1.5 tablespoons olive oil
  • 1/3 cup fresh thyme leaves
  • 1.5tbs maple syrup
  • 1/3 cup pecans
  1. Combine potatoes, olive oil, and maple syrup.
  2. Place on a lined baking sheet, and sprinkle with thyme leaves.
  3. Bake at 180C for 40 minutes, flipping half way through.
  4. Add pecans for the last 5 minutes, then serve.

  1. I swear I could smell thyme for hours on end and still be happy :) It's such a gorgeous aroma!! Love the idea of using it here with maple syrup and pecans. My favourite use is probably in a spiced nuts recipe!

  9. thyme is in my garden and I seem to use it every now and again but I don't know how - probably in stews and soups I think - ours is quite woody compared to the one that you buy in the supermarket but does the trick - love this recipe - must try it esp if this wet weather keeps up
