By popular demand - here is my recipe for the zucchini slice I made last night.
"Full Moon" Zucchini Slice (GF)
- 3 zucchinis, grated
- 1 onion, diced
- 2 cloves garlic, crushed
- 1 tin chickpeas, drained and rinsed
- 1tbs ground cumin
- 1 tbs curry powder
- 2tbs GF flour
- 2 eggs
- 1-2tbs chia seeds
- 1/4 cup grated cheese
- Preheat oven to 180C. Line the base and sides of a loaf tin with baking paper.
- Sautee the zucchini, onion and garlic in a little olive oil until soft (about 5 minutes) then remove from heat and place in a large bowl.
- Meanwhile, process the chickpeas, spices, flour and eggs until smooth. Add to the zucchini mix and stir to combine.
- Pour the mixture into the loaf tin. Top with chia seeds and cheese and bake for 40 minutes.
- Stand for 5 minutes then remove from tin. Stand for a further 10 minutes then slice and serve.
See I told you it was easy!
(Side note: This is a really adaptable recipe so feel free to play around. I often add other veggies such as carrot, spinach etc in the second step, and also change the spices I use depending on what I have on hand. I think some sundried tomatoes would also work well, and you could always make it without the cheese if you were so inclined).
Training:
This morning I skipped my swim workout for work reasons, but I did not skip tonight's interval running session.
After a 1km warm up and around 1km of running drills, we lined up to start the intervals. Tonight it was 5 x 1km (race pace) with 200m recovery in between.
I was a sweaty mess by the time we finished, and it confirmed to me that 1km intervals are NOT FUN! But hopefully they make for a faster runner??
Dinner
Luckily for me I returned home to the wonderful aromas of dinner being prepared. As you know, we are living with Mr BBB's parents while our new house is being built and Mr BBB's mum kindly offered to make dinner on Tuesday night (when I have interval training).
Side note: We have just been advised that our house should be finished towards the end of this month - and we will get our keys on the 6th December! To say that I am excited would be an understatement, and I apologise in advance for all the house photos you will no doubt be subjected to next month ;)
Anyway - where was I? Oh yes ....dinner!
On the menu this evening......tomato and herb omelettes!
Served with a spoonful of chilli relish, and alongside a pile of veggies.
(Plus seconds of the tasty pan-fried potatoes!)
Protein + carbs = the perfect way to end a Tempo Tuesday!

ReplyDeleteI'll def. have to try your zuchinni slice - esp. since we've got LOADS growing rapidly in the garden. It's a lot healthier than the one I currently make - which uses 6 eggs (luckily I have my own chooks :-) ). And that dinner looks so awesome. We often have omelettes but never with a serve of veggies like that - yum!!

ReplyDeleteYour Zucchini Slice looks to. Die. For. Do you think I could substitute chickpea flour for processed chickpeas? Don't have a food processor...but would really like to try it. Maybe change for flour and add some extra moisture somehow...potentially with cottage cheese. Thanks for the idea!

ReplyDelete@ Fallon - I think you culd substitute the chickpeas for chickpea flour if, as you said, you added some extra liquid. You could add an extra egg or pehaps even some milk!
