Training: Ride 25km
The rain lingered this morning so I decided to cut my losses and head to the gym for a before-work spin class. A new release + a desire to work hard = a killer workout!
The lingering rain, however, has brought with it some worrying news.
Yep – the massive amounts of rain have resulted in the lake (where the half ironman swim is set to take place) being closed due to high bacteria levels. Plus, the first short race of the triathlon season scheduled for this weekend has also been cancelled. Did I mention that more rain is also on the radar?!
I. will. not. panic. just. yet.
While the half ironman organisers have a ‘duathlon’ (run/bike/run) contingency plan in place in the event the lake is still closed next weekend, I would be so very disappointed to not compete in the ‘traditional’ race. Particularly given all my early morning swim sessions over the last 3 months!!!
But as I said…I. will. not. panic. just. yet.
One of the other members of our family was clearly not worried…
So let me focus on other things….like this dinner.
Toasted spelt sandwich with turkey, olive tapenade, avocado, jarlsberg and zucchini.
Served with zucchini slices and a side of carrots.
And leftover sushi!
There was no time to rest after dinner though as I needed to start packing to move into our new house next week! Not feeling motivated enough to tackle anything too strenuous, I decided to start with the kitchen pantry.
Check out all the stuff I found!
Amongst the packages was a big bag of roasted peanuts.
And what does one do with a big bag of peanuts?
Why make peanut butter of course! 1 cup of roasted peanuts,
and 1 cup of raw peanuts in their shell. Processed for 15 minutes, scraping down the bowl frequently.
2 minutes…
4 minutes…
8 minutes…
11 minutes…
And 15 mins…
Combined with a teaspoon of salt.
So. very. delicious.
And so.very.easy.
I simply cannot wait to use this homemade peanut butter in tomorrow’s breakfast oatmeal.
And I am already dreaming of a special peanut butter dessert.

Oh wow, yes ma'am! Sorry to hear about the possible flooding, and way to keep up the tenacious training, hon! Moving to the house VERY SOON?!!!!

I wish my food processor would do what yours does - esp in the magic transformation of peanuts to butter - it is so good when it is fresh - sorry to hear your weather is as bad as ours - when will this rain stop! And love your sandwich platter

Peanut butter is one of my all time favorite foods! I can't wait to see what you do.

ReplyDeleteI have a big bag of roasted almonds that I've been wanting to make into butter (they're roasted but unsalted so I don't really like them but if I add salt to the butter I think it would be better) I'm glad you showed the results from start to finish because I probably would have gotten discouraged thinking my food processor was not working!
ReplyDeleteBummer about the lake! Unfortunately, rivers and lakes tend to crest days after the rain stops...so I hope it stops soon!!

Oh, I hope the lake comes right! The PB looks delicious- is your processor super hardcore, or can most processors handle that?
ReplyDeleteOooooh baby. I eat SO MUCH peanut butter, but have never made it. I really should. I'm imagining all kinds of awesome customised versions - with honey, maple syrup, cinnamon, vanilla, etc etc thrown in. Yummmm.

ReplyDeleteYummm! I heard that the rain has flooded the Queanbeyan sewerage works and it's overflowed into the lake. In this case not swimming is definately a good idea!
