Sushi heaven

Training: Swim

I headed to the pool this morning, WITH towel, and swam 2km in around 55 minutes. I was only sharing the lane with one other person, so it was a calm and relaxed swim - a far cry from Tuesday night's madness. Again, I had intended to run after work, but sadly a storm came through making a run impossible. Tomorrow perhaps?

Dinner

With the rain coming down outside, it was the perfect evening to spend time in the kitchen.

I have been excited about tonight's dinner all week. It started, as most good dinners do, with inspiration from the Mystery Box:

Wasabi!

Did you know? Wasabi is a member of the Brassicaceae family, which also  includes cabbages, horseradish and mustard. Its root is used as a condiment and has an extremely strong flavour. Because the burning sensations of wasabi are not oil-based, they are short-lived compared to the effects of chilli peppers, and can easily be subdued with another bite of food or a sip of liquid.

I don't know about you, but I LOVE wasabi in all its "sinus clearing" glory. While Mr BBB is inclined to mix it with a little tamari or soy sauce (pppfft amateur), I prefer mine straight up. Smeared on sashimi or spread into a sushi roll.

I have no idea where this love for wasabi came from? I did travel to Japan when I was 15 (and again earlier this year) and developed a love for Japanese food.  However, I suspect my Dad's penchant to cook "dad's specials" for dinner when I was growing up, which generally included hot mustard of some sort,  may have had something to do with my residual love of wasabi and mustard (or perhaps burned my taste buds so badly that I now cant feel their full effects?!).

But I digress.

When I drew this ingredient, I had only one dish in mind.....sushi rolls! Mr BBB's mum was kind enough to pick up some fresh salmon during the day.

While these rolls are pretty quick and easy to make, they do take a bit of prep work.

While the sushi rice was cooking, I thinly sliced a selection of vegetables...

Carrot, cucumber, asparagus and avocado. (I meant to also use capsicum but it went missing...weird?!)

Then it was time to layer. Starting with sushi rice (sprinkled with a little rice vinegar) and  mayonnaise / wasabi, spread atop a nori sheet (shiny side down)…

Followed by the veggies and salmon.

  10. My co-workers and I did sushi for lunch. I do like the wasabi, but today I happened to put a little too much on one of my sushi pieces and it made my eyes water so bad!

    I didn't realize mayo was in sushi...or is it just in yours?

  11. @ NY Girl - Some sushi rolls will include mayo (I doubt that it is traditional though). I like to mix some mayo with wasabi!

  12. This is some of the most perfect sushi I have ever seen! Dang girl :) I enjoy small amounts of wasabi but I wish I tried it more! I agree about pool madness, it can be quite annoying-glad you had a calm swim!!

  15. I love love love sushi, but I have never really attempted to make them at home.To answer your question, I think I can live without wasabi. The sharpness in it isn't really my thing!

  19. Wasabi isn't just for sushi. there are many different uses for Wasabia japonica (wasabi). They range from cooking to health and cosmetics. Have a look at www.wasabi.org and www.wasabi.co.nz for recipes and other uses. I eat and use wasabi every day both in cooking and to keep the illnesses away.
