Training: Body Balance
Today started innocently enough.
French toast with Mr BBB, a little shopping, some housework, lunch.
And then I crashed. And by crashed I mean sat down to watch a little telly and, before I knew it, I was waking up 2 hours later?!
Talk about an unexpected Sunday siesta….
The problem was that I felt so groggy when I woke up, probably due to the 30+ degrees it was outside. Rather than dwell on my lethargy, I decided to head to the gym for a 5pm body balance class. One hour of yoga + pilates + tai chi later, and I was refreshed and energised, and arrived home hungry and looking for a no fuss dinner.
A Mexican siesta inspired dinner if you will…
No-fuss nachos.
Layer…
Upon layer…
And layer.
Grilled and topped with avocado….
Sour cream and green onions.
A perfect end to my Siesta Sunday :)
No fuss nachos for one. A healthy take on an old favourite.
Clearly I hated them ;)
No fuss Nachos (makes 1 generous serve)
- 80-100g tortilla or corn chips
- 1/2 cup tomato passata
- 1 tomato, deseeded and chopped
- 1/2 tsp chilli flakes
- 1/2 cup broccoli, cut into florets (steamed in the microwave)
- 1/2 cup corn kernels
- 1/2 cup grated cheese
- Sour cream, diced avocado and green onions to serve
- Combine passata, tomato and chilli flakes and set aside.
- In an oven-proof dish, layer 1/2 the tortilla chips and sauce, 1/4 cup cheese, 1/4 cup corn and broccoli.
- Top with remaining chips, sauce and corn, finishing with the remainder of the cheese.
- Grill for 5 – 10 minutes, or until the cheese has melted.
- Top with diced avocado, sour cream and green onions.
- Enjoy!

Nachos are a favorite in our house, too! I swear my husband could eat them every day! :)

ReplyDeleteMy boy's favorite food is nachos! Unfortunately he means the kind you get at sporting events with the gross neon orange cheese & crappy chips. I'm hoping to convert him though to really good ones some day! Yours might be a good start-minus the broccoli of course, that's not his thing. :)

ReplyDeleteI actually hate napping! I just feel MORE tired afterwards, so I just try and get a good nights sleep instead :)
Oooh where did you get the strips? I have seen the tortillas in that brand, nut not that product. Looks yummy...

ReplyDeleteI can't nap at all in the afternoons, I keep thinking about things I need to do, plus I wake up feeling awful afterwards. Those Nachos look super delicious and healthy!
