Indian Feast – Part 3

Ok – so you would think that after the paneer, dahl and salad, our Indian Feast would be complete.

But what feast is complete without dessert??

Particularly when that dessert is a Persian Orange and Almond Cake. OK we deviated from the Indian theme slightly ;)

Would it be bold of me to say that I think we saved the best for last????

Because after one bite of this gluten free orange cake….

I was sold.

Sweet, slightly bitter and moist…

Delish!

What intrigued me about the recipe (which I got from here), was that it used 2 whole oranges.

And no – not just the rind or the juice….

Two whole oranges!

Boiled until super soft then chopped…

Processed…

and added straight to the cake batter.

But the orange theme did not stop there. Accompanying the cake was a sweet orange syrup.

Juice, zest, sugar and water.

Simmered until thick and luxurious!

And then drizzled on serving dishes…

Adding an extra citrus kick to an already flavourful cake.

Soft and almost fudge-like on the inside…

You’ll struggle to stop at just one piece…

Overall, this cake offered a lovely end to our Indian Feast! We had a lot of fun planning, cooking and, of course, eating these dishes. Made all the more delicious given they were  shared in the company of good friends!

I wonder where our next dinner party will take us??

  5. I've never seen a cake that uses 2 whole oranges before. That looks so yummy. I bet it would be good for Easter dessert.

  11. I adore that cake. The first time I tried it it was from a cake shop in Melbourne and I tried desperately to find the recipe. I eventually found it in a Nigella cookbook. At first I thought it was made using a syrup as it was so moist! Who would've thought that boiling oranges and processing them would be the trick!

  15. I made a cake similar to this a few weeks ago and was so hesitant about it cause of the whole oranges. It worked out beautifully though and was so moist.
