Magical March

Training: Bike 10km/Elliptical 20mins/Touch football

Happy April Fool's Day.

Thankyou all for your sweet comments about my kitchen. I am in love with it, but that goes without saying seeing as we designed it ourselves lol. I know I have been promising a big reveal of our new house for some time now, and I will. Soon. We just have to finish a few more things first :) Like the landscaping...the dreaded landscaping ;)

So today, although I have no suitable April Fool's Day tricks to share with you, I do have another monthly recap!

Did you miss my other ones?

I was flicking through my March photos and realised that it was quite the 'food' month. And, although I gave you the opportunity to make your own Mystery Box

I only managed to select 1 ingredient from it!

Fenugreek!

Despite this, there were a heap of new recipes tried and shared. And, I am not sure whether I was in denial about Summer having ended, but many of my dishes were salads.

Rainbow Salad with tahini sauce

layered Asian salad

pumpkin and beetroot salad

And who said salads have to be boring??!!!

But it wasn’t only about salads. There were many other savoury dishes, making it hard to pick a favourite!

From haloumi fritters...

IMG_6216

and mozzarella 'meatless' meatballs

IMG_6532

to salt and vinegar potato wedges

IMG_7035

and sweet potato and coconut nuggets

And let's not forget my other favourite .... of the baked variety.

The fig jam tart.

Despite all appearances, it wasn’t all just cooking this month.  There were multiple interstate work trips, including one that allowed for a sunshine run in Hervey Bay ...

and time spent with favourite friends in Melbourne.

Our library was finally organised...

And we threw a special birthday party for the in-laws!

And so one month ends, and another one starts. Here's to an Amazing April!

Who thinks that it should be filled with Mystery Box inspiration to make up for March??

What about you? Was your March magical?

Happy Baking :)

  12. March was definitely a busy month for me as well. I am looking forward to a quiet April and then another busy month in May and hopefully an overseas trip in June to escape the cold canberra winter!
