Training: Body Step / Elliptical 21 mins / Push ups 20
Wowza it was a cold one in Canberra today. Luckily I had the perfect way to warm up after work…. Body Step! And with that, plus 21 minutes on the Elliptical beforehand, and some pushups after the class to finish, I was thoroughly ravenous by the time I returned home.
Have I mentioned lately how much I love Body Step? hehe perhaps once or twice ;)
With a post workout hunger, it was lucky that we had a QUICK meal on the menu this evening – which happened to be based on another recipe from Julie Goodwin's cookbook.
Salmon with a rich lemon sauce.
My recent yoghurt theme continued, as I subbed the cream in this recipe for the last of our natural yoghurt also.
Resulting in a rich flavoursome sauce, with a nice citrus hit.
As for the salmon, Mr BBB pan-fried salmon fillets until the skin was crispy, and the salmon was just cooked through.
Served alongside steamed asparagus…
Zucchini ribbons…
A slice of lemon…
And finished with the rich lemon yoghurt sauce…
And a sprinkle of dill.
A gourmet looking mid week meal….
But don’t be fooled, it was both super easy and super quick to make!

ReplyDeleteOhhhh, I used to eat salmon fillets at least once a week when I lived at home, but haven't had them in over a year! Must go back to parents' for Sunday dinner soon... :P
ReplyDeleteI usually make poached salmon with dill sauce & all the trimmings-capers, red onion, lemons, etc. The kids & I love it! Your dish is beautiful, by the way!
ReplyDeleteI absolutely love salmon! It's one of my favorites fish-wise. I like to have it grilled with a sweet potato! Yum!

ReplyDelete@ Monique - we just used a slicer to slice them thinly then steamed them for a couple minutes. Super easy!

ReplyDeleteI'm normally not adventurous enough to cook salmon - in my mind it is super difficult - but this might motivate me to change my mind! It looks delicious and I'm impressed with the mid-week positioning of it.
