The weather has well and truly turned here, with frosty mornings and brisk days making their regular appearance. And, while I am not the biggest fan of cold weather – there are some things that I like about Winter…
Boots.
Scarves.
Cuddles on the couch.
And comfort food.
Oh how I love the rich, belly warming foods that inevitably find their way to our dinner table during the Winter months. The added bonus being that they can be slow cooked throughout the afternoon, and generally yield enough for quite a few meals.
One of my favourite dishes will come as no surprise (given that it has featured on this blog quite a few times before).
Chilli Con Carne!
Made with whatever vegetables you have on hand..
Coupled with spices for that chilli kick.
And slow cooked with mince, beans and tomatoes until thickened and full of flavour.
Served, of course, with some tasty toppings – grated cheese, avocado, sour cream and corn chips (as was the case at our recent family dinner).
Ahh Winter -
You may not be my favourite month…but at least you are delicious.

Looove a good slow cooker meal, in fact I have something similar to this planned for this week. Mind you, I tend to use it all year round, not just for winter comfort :)
ReplyDeleteKnowing that they'll end is about it. Well, I guess also being able to bake without it getting too hot in the kitchen. But no, really, I hate Winter because my feet turn blue.
ReplyDeleteI did make chilli con carne just last weekend, though. It was awesome. So that's fine.
I seem to have lost my 'pregnancy warmth' so I too am now suffering from blue feet :(

ReplyDeleteI hate the winter months (I know, I know - such a strong word) I've even thought about becoming a groundhog over winter to avoid it, haha. But I always say, if I win the lottery one day I will most definitely be traveling across the globe to bypass winter :P

ReplyDeleteA warm bed, a hot water bottle, brisk afternoon walks with the dogs to warm up, and long car trips. The car is always a reliably warm place in winter. :-)
