Baked potato bar / buffet

If you are looking for an easy way to feed a crowd, and something that can be pulled together relatively quickly and without much fuss, might I suggest a baked potato bar / buffet.

Which is exactly what we did for dinner over the weekend, when my Dad was in town, and we had a few more family members over for dinner.

About an hour and a half before the little Miss was due to go to bed,  I washed and dried some large potatoes and sweet potatoes, and placed them in the oven to ‘bake’ (along with some roast beef).

Then, while the potatoes were happily baking away, all I had to do was set out the fun stuff. Aka – the potato toppings.

In our case – sour cream, grated cheese, sliced bacon, mushrooms, chives,  avocado  and garlic butter (un-pictured).

Along with a green salad.

When the potatoes had finished cooking, everyone got to work building their own potato creations .

I chose a sweet potato, and topped it with a combination of mushrooms, grated cheese, sour cream and chives.

And one that I would definitely make again. The possibilities for toppings really are endless. I think next time I would also set out some steamed corn and perhaps some tomato relish.

  3. When I went on my writing course in Scotland two years ago, the veggie main course one night was baked potatoes stuffed with sauteed leeks and boursin (French cream cheese with herbs). It's my favourite filling now, as it always makes me think of that time.

  4. What a fabulous idea. Def. going to try this out. Would be great for when Amy has friends over. I actually baked a sweet pot in the oven for the first time the other day. So delicious. I used a recipe that I'll be posting on my blog soon.

  6. I've done this before and it really is a great idea. So many combinations! I love the traditional Aussie toppings of coleslaw and beetroot.

  9. Love that you gave the sweet potato option too! It's been a long time since I have a baked potato, but I liked taking the idea from wedges and having them with sour cream and sweet chilli sauce :)

  11. apparently the potato shop in edinburgh has closed - it sold great toppings like veg haggis on baked potato! I love baked potatoes but rarely find big enough potatoes when I am in the mood. I had a baked sweet potato recently when I loved but I mashed up the middle with flavours which was great - hadn't thought to eat it like a baked potato but must try that
