Meat n’ three veg

Meat n’ three veg.

Pretty much my staple diet growing up, and possibly the staple diet for many of you growing up as well.

And last week we went back to those roots, with a classic meat dish on the menu.

Corned beef.

Simmered gently in a large pot with water, carrots, onion, red wine vinegar, brown sugar and peppercorns.

Served with a parsley béchamel sauce (my favourite bit) and, of course, the three veg.

In our case, peas, brussel sprouts and a roasted sweet potato.

Somewhat of a retro meal – but perfect for the Winter chill.

  2. We grew up with really traditional meals and I really burnt out on the meat and three veg. My husband and kids like to eat that way so I happy cook for them and either modify it to the way I prefer or make a separate meal for me.

    Your corned beef looks lovely. If we are making it for cold meat in the summer I do it in the slow cooker and it's perfect to cut the next day. It just breaks up when it's hot though so for a warm meal I use the saucepan.

I grew up quite the opposite :) I think I can count on one hand how many dinners I have had that are 'meat and 3 veg' in their composition - and most would be Christmas or pub meals in the UK :) We were more of a vegetarian, casserole and stir fry household, with BBQs thrown in for good measure!

  5. I like the meat and 3 veg idea-- I tend to do meat + veg (usually greens) + grains (rice, quinoa, etc.). I need to up my vegetable quotient!
