One vegetable that arrives in our vegetable box almost every week is potatoes.
And being such a versatile vegetable, we’ve had them roasted, mashed, baked and blended into soup.
But on this occasion, I did something a little different.
I made a potato salad!
Using this recipe for inspiration, once the potatoes were cooked and cooled, the salad came together with ease.
Potatoes, hard boiled eggs, gherkins, ham, spring onions, whole egg mayo, garlic and lemon juice.
All combined to create a flavoursome salad (that lasted for a few meals given there is just the two of us).
You could easily omit the ham to make this vegetarian – and perhaps use natural yoghurt in place of the mayo if you wanted a lighter, healthier version.
Either way, I think this would be a nice addition to a BBQ spread once Summer hits!

ReplyDeleteI'm a big fan of potato salad, even when I would make it in 50lt tubs and have to dig into up to my shoulders to mix it :) That's true love indeed! Your version looks delicious with the addition of gerkhins, yummo!
