After a rather indulgent few days, and an abundance of fresh produce in our fridge, I went back to basics for this dinner.
Just salad + protein.
Starting with mixed greens, carrots and corn…
Topped with grilled chicken (seasoned with lemon pepper) and sautéed mushrooms.
So so simple…
Yet rather tasty indeed.
The fresh crunchy salad was just what I was craving. Even if it is below 0C outside….

I love your inclusion of corn here - it's a vegetable I tend to forget. I'm not really back into salad eating yet (despite it being much warmer here than in Canberra!) but I'm sure I will be soon.
