Wow – posting this dish highlights how behind I am in blogging my recent kitchen creations.
For we served this frittata for a light dinner when our friends arrived in town for the weekend quite a while ago.
The photos also reminded me that I made 2 frittatas that day.
One started like this…
But I put it in the oven, got distracted, forgot to set a timer, and then smoked out our living room with burnt egg.
Not nice at all.
It was a mercy dash to the shops for more eggs, and sweet potato, but this time I forgot the spinach. So my second version was a little less colourful.
But thankfully it was still packed with flavour (and minus the char!).
Just cubed sweet potato (that I had steamed until tender), chopped semi dried tomatoes, eggs, parmesan and a splash of cream.
Baked until golden brown (this time) and served for a light dinner, along with a green salad.
