This meal, that graced our dinner table (some time ago now), highlights just how easy home cooking can be.
Using ‘whatever’ ingredients I had on hand…
(onions, garlic, quinoa, frozen peas, chilli powder, capsicum, carrot, oregano and cumin)
Along with a trio of beans…
We had ourselves quite the vegetarian chilli party!
I would give you a recipe, but there really is no need.
Just heat some olive oil in a large pot, add the onions, garlic and your vegetables. Throw in the other herbs, quinoa and water (using a 1:2 ratio), and some tinned tomatoes, simmer for half an hour, and you are done!
On this occasion we served the chilli alongside a green salad ..
Jazzed up with some cucumbers, raw cashews and dried cranberries.
Too easy!
The best part being that there are inevitably leftovers to enjoy for lunch or dinner the next day!
What about you? Are you a fan of one pot meals? I certainly am – especially when it means there are less dishes to do afterwards!

Wow! That looks AMAZING. You are making me hungry! I love one pot meals.. nice and easy.
ReplyDeleteThat looks so yum! Did you follow a recipe or just 'wing' it?

DeleteWhat a great result for a wing -it recipe! I'm with you on one pot dishes, I don't like washing up :P
ReplyDeleteThis looks wonderful Lisa - just my sort of meal when at home. I kind of wish I could have a pot on hand when travelling too, to dip into as needed :)
ReplyDeleteLooks delicious. Def. going to try this even though I seem to have gone off spicy food (much to Kevin's horror). I love me a one pot meal.
ReplyDeleteI haven't made chilli non carne for ages but now you have me hankering after some - esp with quinoa. One pot meals make life so much easier - wish I had one in the fridge now!
