When I was growing up, my parents worked shift work so it wasn’t unusual for Dad to be in charge of getting dinner on the table. And one of his specialties (that didn’t involve curry powder, bless him) was tacos.
You know the kind – straight out of the old ‘el paso box. That we would stuff ourselves at the dining room table.
And one night, not so long ago, I had a craving for just that!
Starting with the mince – browned with spices, corn and shredded carrot.
Coupled with all the fixins’
Tomato, lettuce, spicy tomato sauce and grated cheese.
Stuffed into hard corn shells…
And eaten, messily, while standing at the kitchen bench discussing the days events.
