Salmon salad

Short on time, and short on sleep. That is how I have been feeling recently. But, it’s Thursday, which means the weekend is not too far away, and I am most certainly happy about that!

Another thing I was very happy about recently, was this tasty little salmon salad.

Salmon, pan fried to perfection…

Then sliced and placed atop a big bed of greens.

Finished with a sauce – made simply with light mayo, parsley, lemon juice, garlic and horseradish cream.

Blended until smooth.

What a tasty meal this turned out to be.

It looked, and tasted, quite fancy, but came together in only around 10 minutes.

I particularly loved how the salmon became a little crispy on the outside – even though we had taken the skin off (I can never seem to get the skin crispy).

With the warmer weather slowly making its appearance, I expect to see more meals like this making an appearance in the BBB household over the next few months!

  2. I love this sort of thing for lunch or dinner. And I make a similar dressing but I use milk just to make it a bit lower in fat although I should give that low fat mayo a try-is it nice?
