Walnut pesto pasta

I am shamefully very behind in posting my dinner creations. I think it has something to do with that little thing called ‘life’ consuming a lot of my spare timeWinking smile 

But rest assured there has been a lot of creating in the BBB kitchen recently. Lots of which I hope to share with you over the coming month.

Take this rather simple yet delightful walnut pesto pasta we indulged in a little while ago. And yes, I am acutely aware that it was only yesterday I was regaling non-pasta alternatives to traditionally pasta-laden dishes!

But bear with me…..

During the afternoon, I put together the pesto.

Quite simply – walnuts, garlic, basil, parmesan and olive oil. Blended until smooth.

Then when the little Miss went to bed for the evening, I got to work on the rest of the dish.

GF fettuccine, cooked until al dente with a cup of frozen peas thrown in for the last few minutes of cooking time.

Drained, then added to the walnut pesto, and heated until warm.

Finished with a sprinkling of shaved parmesan and a good amount of cracked pepper.

And our rather rich mid week meal was complete!

All in all – I think this meal took less than 15 minutes to put together. Just the type of meal one needs when time is short, but appetites are hearty!

  2. This looks great - I am always looking for quick pasta dishes and yet despite trying some I can hardly remember any - though Jamie Olivers quick creamy cauliflower pasta is one I loved
