True to form, my Jamie Oliver 15 minute meals cookbook continues to get a good workout these days. Not necessarily because I am looking to get dinner on the table in 15 minutes (my average is more like 30 minutes), but because I simply love the combinations he comes up with.
This lamb kofte platter was no different.
For it was more than just meatballs.
Yup – it was served with a flavour-packed couscous salad and lots of other fixins’ – making it quite an impressive meal when it all came together! Served communally, of course
Sticky, pistachio nut crusted kofte, served alongside a tangy Greek salad and soft pita bread.
And the couscous – the chilli minty couscous, that I could have eaten by the bowlful.
A wonderful, wonderful meal indeed – and one I will have to share again when we have friends around for dinner.
